The grapes were hand-harvested from 25 different plots with vines averaging 70 years old on granitic sandy soils. In the winery, the grapes were pressed and then gently cooled for 24-48 hours before being transferred directly to barrels for fermentation with native yeasts. Spontaneous malolactic fermentation followed by 6 months of aging in oak. The wine is unfiltered. Pairing: Versatile. Seafood, poultry, red meat, rice and pasta, and cheese.
