This is Damien's flagship Chenin Blanc and showcases him at his best: this wine has a very expressive and complex bouquet. On the palate, you'll discover a harmonious blend of white peach, lemon, pear, and crisp apple, all culminating in a graceful, lingering honey finish. The grapes come from vineyards with the famous tuff (limestone) soil, which has a reputation for producing the finest Chenin Blanc. Fermentation was slow with native yeasts. The lees were lightly stirred before bottling. A versatile wine that complements a wide range of dishes, it's a reliable choice for any dinner party. It's particularly delicious with seafood, poultry, or cheese. While it can be enjoyed immediately, it has the potential to age for another 6–8 years. For the best experience, serve well chilled.
