Located in the northern part of Mount Etna in Sicily, I Custodi is a boutique winery founded in 2007 by Mario Paoluzi. He collaborated with local oenologist Salvo Foti, a driving force in reviving the reputation of Etna wines, to create more than just terroir-driven wines.
I Custodi, which means "the guardians," represents a commitment to preserving the land, honoring local traditions, and respecting the people of Etna. At the heart of this commitment are "I Vigneri," a guild of local vineyard workers, both old and young, who practice and learn ancient methods of vineyard care. This transfer of skills is crucial, as I Custodi's ancient bush vines (freestanding plants) require manual techniques that are five times more time-consuming than modern vine-training methods.
I Custodi cultivates four vineyards in the north and east of the country, each with different altitudes and exposures. The backbone of their red wines is the native Nerello Mascalese grape variety, which, with its berry notes, high acidity, and refined tannins, is similar to Nebbiolo, but also has a hint of smoke and earth. Two exceptional red wines, Aetneus and Saeculare, are produced from centuries-old and 250-year-old vines, respectively.
The white wines are made from the Carricante grape and are characterized by citrus aromas, orange blossom honey, and a hint of salty, mineral notes. Both the white and red wines are very suitable for ageing.
I Custodi is certified organic and uses only indigenous yeasts. Enjoying this range is thought-provoking and invites you to reflect on the origins of the wines—the soil, the heritage, the hands behind them. The impressive complexity and incomparable aromas offer a stunning experience.
