
Signum AOP Côtes du Roussillon 2018 75cl
Signum is an exceptionally delicious blend of Syrah and Grenache, crafted with care and patience using a slow winemaking process. This wine presents a purplish-ruby red hue and reveals a bouquet of spices with black fruits and currant jam, with a subtle hint of coconut. On the palate, a harmonious fusion of concentrated black fruits flavors blends with black currant and a gentle undertone of vanilla. This blend delights with refreshing acidity, velvety tannins, and a long, pleasant finish. The organically farmed vineyard for Signum is located in Le Soler on calcareous clay soil with river pebbles. The grapes were hand-harvested, destemmed, and then transferred to 400-liter barrels for light pressing. They were hand-mashed for 20 days, macerated for 30 days, and slowly pressed by hand. After fermentation, the wine was aged for 12 months in French and American oak barrels, filtered, and then bottled. Aging potential: Drink now or age until 2028.
