Zerberos El Altar embodies a minimalist approach characterized by elegance, tension, and grace. Sourced from a single vineyard, it reveals ripe red fruits accentuated by delicate floral notes and a subtle hint of cedar. A well-structured palate leads to a lingering finish that underscores its elegant character. The grapes were hand-harvested from the north-facing El Altar vineyard on granitic sandy soils with vines over 45 years old. The vineyard lies at an altitude of up to 1100 m. In the winery, the grapes were destemmed, crushed, and macerated on the skins for 25 days. After fermentation with indigenous yeasts, the wine was aged for 12 months in 600-liter French oak barrels. This wine is neither fined nor filtered. Pairs well with: Versatile. Goes well with meat, poultry, pizza, pasta, cheese, sausages. Aging potential: Drink now or let it mature until 2028.
