
Carignan Sauvage IGP Côtes Catalanes 2022 75cl
The Carignan Sauvage is a unique wine made from old Carignan vines, without added sulfites. This wine has an intense crimson color and, after some time in the air, develops an aromatic bouquet of red stone fruit with floral notes. On the palate, it is delicate and expressive, reflecting the complexity of the soil and the great age of the vines. The organically farmed vineyard for the Carignan Sauvage is located in Le Soler, on calcareous clay soil with river pebbles. The grapes were harvested by hand, fermented spontaneously, and macerated for three weeks. Before bottling, the wine was aged for several months in stainless steel tanks. This wine contains no added sulfites. Pairs well with: meat dishes, poultry, pizza, pasta, cheese, and cured meats. Given its freshness and lightness, it also pairs well with fish. Aging potential: Drink now or allow to age until 2030.
