I Custodi, meaning ‘the guardians’, is a project committed to preserving the land, honouring local traditions, and respecting the people of Mount Etna. Their wines embody the untamed beauty and volcanic terroir of Mount Etna, offering a unique and expressive palate journey for all wine-curious explorers.
Imbris Superiore is an exquisite Etna white wine hailing from the eastern slopes of the volcano, where the sea breeze imparts a delightful saline touch to the grapes. This wine reveals a yellow straw appearance and entices with aromas of citrus fruits, subtle herbal notes and a hint of honey. On the palate, these flavours come alive, supported by a crisp acidity that leads to a nuanced, lingering mineral finish.
The vineyard for Imbris Superiore is located at 900 metres altitude, in Caselle, a cru plot in the municipality of Milo, on the eastern slopes of Mount Etna. This vineyard comprises sandy and volcanic soils that are very rich in minerals. The grapes were hand harvested, selected and brought to the winery where whole clusters were soft-crushed. Fermentation took place in stainless steel vats and the wine was then aged for 18 months in steel vats before being bottled and aged another 2 years
