I Custodi, meaning ‘the guardians’, is a project committed to preserving the land, honouring local traditions, and respecting the people of Mount Etna. Their wines embody the untamed beauty and volcanic terroir of Mount Etna, offering a unique and expressive palate journey for all wine-curious explorers.
Aetneus is a rare and delicate dry red wine that goes down all too smoothly. It’s crafted from century old vines of native Etna grapes - Nerello Mascalese 80% and Nerello Cappuccio 20%, and can draw comparisons to Pinot Noir.
This wine reveals a ruby red shade and greets the senses with intense aromas of ripe cherries and strawberries, accented by delicate hints of tobacco and dried herbs. On the palate, it’s elegant and refreshing, with a tingling acidity that unveils subtle notes of volcanic earthiness. Soft tannins enhance the overall experience, leaving behind a lingering and delectable finish.
The vineyard for Aetneus is located at 780 metres altitude, in Solicchiata, Contrada Muganazzi, on the northern slopes of Mount Etna. This vineyard contains vines that are 90+ years old and comprises sandy and volcanic soils that are very rich in minerals. The grapes were hand harvested, destemmed (80%) and crushed before fermentation in steel vats, which included 12 days of maceration. Following malolactic fermentation, the wine was matured for at least 3 years (2/3 in old oak barrels and 1/3 in new oak barrels). The wine was then blended and bottled to rest and refine for another 2 years.
