Bossanova crafts modern expressions of indigenous Abruzzo grapes. Their organic farming, minimal intervention approach yields wines bursting with unique character and personality.
Capsule Two Bio is a bright and fruity, slightly salty Pet-Nat made from a blend of 3 local grapes from Abruzzo - Trebbiano d'Abruzzo, Montonico and Passerina. This sparkling wine is bright yellow and reveals a bouquet of blended citrus fruit and peaches, accented by hints of apricot and delicate floral notes. On the palate, it delivers a refreshing fruitiness, punctuated by a subtle saline twist that adds an intriguing dimension.
The Controguerra and Corropoli Vineyards for Capsule Two Bio are located at 230 metres altitude on clay soil. The grapes were hand harvested and spontaneously fermented using indigenous yeasts. The fermentation in concrete was partially halted so that the remaining fermentation could be completed in the bottle. This wine is not fined, nor filtered.
