Agri Segretum crafts small-batch, terroir expressive wines from Umbria, specialising in indigenous grapes with minimal intervention.
Cinino, meaning ‘little one’ is a Pet-Nat, hand crafted from the indigenous Grechetto di Todi grape. Cinino Bianco is a lively sparkling wine with an intriguing shade that’s close to a light burnt orange. It reveals a subtle bouquet of citrus notes, lightly sprinkled with herbs. On the palate, it offers a playful and refreshing experience, with gentle effervescence dancing alongside the vibrant flavours of citrus fruits, apple, and pear.
The organically farmed vineyard for Cinino is located at 300 metres altitude in Todi, Umbria on limestone and clay soils. The grapes were hand harvested, selected, and spontaneously fermented in stainless steel tanks. After 40 days of slowly lowering the temperature, fermentation was halted, the wine was bottled by hand, and fermentation continued in the bottle producing delicate bubbles. After settling and stabilising, the wine was disgorged. This wine is not fined, nor filtered.
