In the northern part of Mount Etna, Sicily, lies I Custodi, a boutique winery founded in 2007 by Mario Paoluzi. He collaborated with local guru oenologist Salvo Foti, a driving force in reigniting Etna's wine reputation, to create more than just terroir-driven wines. 

I Custodi, meaning ‘the guardians’ embodies a commitment to preserving the land, honouring local traditions, and respecting the people of Mount Etna. Central to this commitment is 'I Vigneri,' a guild of local vineyard workers, old and young, practicing and learning ancient methods of vineyard care. This skill transfer is vital because I Custodi's old bush vines (freestanding plants) require manual techniques that are five times more time-consuming than contemporary vine training methods.

I Custodi manages four vineyards, north and east, each with differing altitudes and exposure. The backbone of their red wines is the indigenous Nerello Mascalese grape, vaguely similar to Nebbiolo with its berry notes, high acidity, and refined tannins, but with hints of smoke and earth. Two exceptional reds, Aetneus and Saeculare, are produced from century-old and 250-year-old vines, respectively. 

Their white wines feature the Carricante grape, with citrusy flavours, orange blossom honey and a touch of saline mineral notes. Both the whites and reds are age worthy wines.
