A higher altitude experience from Dominio do Bibei, the dazzling star of the steeply terraced vines in Ribera Sacra. This is a deliciously fresh dry white wine. It reveals citrus and floral aromas evolving to a blend of citrus and stone fruit on the palate, with just a hint of salt and nut flavours at the end.
The grapes were hand picked from vines aged 15-100 years old on sandy granite soil, then de-stemmed and fermented with indigenous yeasts. The wine was aged on fine lees for 8 months in a variety of pre-used oak barrel sizes followed by further aging in concrete tanks.
Food Pairing: Pairs well with seafood, chicken, cured meats and chicken
