Laherte Frères has been crafting Champagne since 1889, growing with each generation, and guided by principles of authenticity, sensitivity and care of the environment. 

Les 7 Solera is an exceptional and intriguing Champagne unveiling depth and complexity with well balanced fruit notes. The grapes were sourced from a very old plot (250 years) that was replanted in 2003. What makes this Champagne so unique is that it is made from 7 different grapes, including some lost grapes, to create a Champagne with the same taste as 250 years ago. The blending method is also unique, adopting the Solera method, where 60% of the wines are blending with 40% of reserve wines, backing to 2005. 

The grapes were hand harvested and fermented in barrels. Following malolactic fermentation, the wine was aged on fine lees with regular stirring. Dosage: Disgorgment by hand. 4g/L. 

Food Pairing: Don’t be shy. While Champagne is great with appetisers, it pairs well will a lot of dishes.
