Château Nadal Hainaut is a modern, innovative family winery led by 3 sisters adding their personal touch to outstanding Roussillon wines.

Signum is an exceptionally delicious Syrah and Grenache blend, meticulously crafted from slow winemaking care and patience. This wine presents a purple-ruby shade, unveiling a bouquet of spices with black fruits and blackcurrant jam, with a subtle hint of coconut. On the palate, you encounter a harmonious fusion of concentrated black fruit flavours intertwined with blackcurrant and a gentle undercurrent of vanilla.  This blend delights with refreshing acidity, velvety tannins, and an enduring, pleasurable finish.

The organically farmed vineyard for Signum is located in Le Soler, on chalky clay soil with river pebbles.  The grapes were hand harvested, destemmed and then put into 400L barrels for light crushing. They were manually punched down for 20 days,  macerated for 30 days and treated to slow manual pressing. After fermentation, the wine was aged for 12 months in French and American Oak barrels,  filtered and then bottled.

Food Pairing: meat dishes, poultry, pizza, pasta, cheese and cured meats.
