The grapes were hand harvested from the Canto la Calva vineyard with vines over 45 years old. Once at the winery, the grapes were destemmed, crushed and macerated on skin for 43 days. Following fermentation with indigenous yeasts, the wine was aged for 7 months in 500L French oak barrels. This wine is not fined, nor filtered.
