The grapes were hand harvested from the north facing El Altar vineyard, on granitic sandy soil, and with vines over 45 years old. The vineyard ranges up to 1100m in altitude. Once at the winery, the grapes were destemmed, crushed and macerated on skin for 25 days. Following fermentation with indigenous yeasts, the wine was aged for 12 months in 600L French oak barrels. This wine is not fined, nor filtered.
