The grapes were hand harvested from a south facing vineyard, on granitic sandy soil, and with vines around 90 years old. The vineyard ranges up to 1100m in altitude. Once at the winery, the grapes were sorted, destemmed, crushed and macerated on skin for 58 days. Following fermentation with indigenous yeasts, the wine was aged for 12 months in 300L French oak barrels This wine is not fined, nor filtered.
