The grapes were hand harvested from the south facing El Valle vineyard, on granitic sandy soils that have a layer of schist on the subsoil. The vines are over 100 years old and altitude ranging up to 1100m. Once at the winery, the grapes were sorted, destemmed, crushed and macerated on skin for 50 days. Following fermentation with indigenous yeasts, the wine was aged for 9 months in 300L French oak barrels. This wine is not fined, nor filtered.
