Daniel Ramos exemplifies the artistry of winemaking, crafting exceptional expressions of high altitude wines from the mountainous region of Sierra de Gredos.
This wine is from his Kπ (Kapi) range - he is affectionately known ‘El Capitan’ by his mates
Kπ Real is a unique, balanced and complex orange wine. Beautiful, interesting and made in the traditional style with clay amphora and, for even more character, under a bit of flor. Albillo Real is the grape, which is pretty much only found in Sierra de Gredos.
The colour is pale lemon, revealing a rich bouquet of lemon, orange, honey, pastry and jasmine that extend to the palate. It’s lush, with a slight minerally finish.
The vineyards range from 70-200 years old. The grapes were hand harvested and fermented using indigenous yeasts in clay amphora, with skin contact for 5 months. The wine was aged for 6 months, with biological aging so that flor could develop, giving the wine that rich, complex mouthfeel. This wine is unfiltered and unfined.
Food Pairing: Pairs well with soft and mild cheeses, cured meats and rice dishes
Serve: Serve slightly chilled to allow the complex flavours to shine
Aging potential: Drink young
